Today’s blog is a very special one, since I am sharing one of my favorite family recipes. The dish today is an inspiration from my home country, Panama. Growing up, my grandmother used to make her chicken and rice for the whole family every Sunday. I feel a special sense of nostalgia each time that I remake this recipe. The scent alone brings back a flood of happy childhood memories.
For this recipe you will need the following ingredients:
1 (2-3 pound) whole chicken, cut into pieces
1 onion chopped
1 green bell pepper chopped
2 cloves garlic, (minced)
1 (14.5 ounce) can stewed tomatoes
1 cup rice
1 can tomato paste
1 can of corn
2 teaspoons salt, or to taste
1 teaspoon dried oregano
½ teaspoon ground black pepper
2 cups chicken stock, or as needed to cover
In a large pan, heat a tablespoon of oil on medium to high heat. Add the chicken, and cook until brown for 5 minutes (don’t over cook or it will be dry). Take out the chicken, pull apart the meat, and return to the pan. In the same pan, add another tablespoon of oil and add in onions and garlic. Cook over medium heat for 2-3 minutes until onions are transparent. Add cooked rice and make sure it’s all coated with the oil. In a seperate bowl, mix tomato paste, water/chicken stock, corn, peppers, bell peppers, cooked rice, pulled chicken, cooked garlic, and cooked onions. Season with a pinch of salt and pepper, and mix thoroughly.
Dinner just got real easy. Enjoy it!!!
